There is no choice involved in taking loans, only enough to cover your feeding shortfall (or if you can't pay interest on existing loans).
We use a variant where interest increases each time you take out more loans than players, i.e. in a 3p game interest rate is 2 when you have 4 loans 3 with 7 etc

Based on the number of loans provided with the game, it seems very clear that the designer intended for players to take out a lot of loans. Why do you think your version of the game is better than the one that Rosenberg designed?
Because I have tried both and prefer mine. Same as variant we use for Agricola, all players get the same food but second family members are placed in reverse order for the first turn. Not saying it is better, just a preference based on my experience
